Roast Duck

I work as a hotel facilities and maintenance manager.  But my passion is outdoor cooking.  I found these ducks from my Gardener.  His father’ neighbor raises them.  Understanding my passion for cooking, and food quality he brought me two.  About 5 months old.  We had fresh duck eggs for a few months, which were delicious. Big creamy yolks, they were great.  The girls had fun collecting the eggs and caring for them.  We fed them our kitchen cuttings and they helped themselves to tomatoes from our garden.  And we realized later goldfish from our pond.  We planned on teaching the girls how to prepare them for eating.  I live in an urban area where not to many of our neighbors have animals.  So many of them brought their kids over to visit our ducks and chickens.  The day came when we all were free to dedicate a day to cooking them.  We all helped to pluck them, and prepare them for the grill.  We decided on a slow smoke in the pit barrel.  We rubbed them with oil, herbs, and salt.  Stuffed them with leeks and limes.  Then put them in the pit barrel.  We used a hickory wood fire and set them in when the grill was around 250.  I have to say these were the best tasting birds I have ever had.  Raising them on fresh veggies and corn in a happy environment was well worth it.  Plus the girls learned where their food comes from.  This is something the wife and I wanted them to experience.  All in all this was a great success.
