You know when you get invited to a BBQ, and you offer to bring something?  I usually get asked to bring my potato bombs.  This is something I kind of made up along the way, with input from my friends and a little YouTube from the Bbqpitboys.  I have tweeked it to my liking, and here it is.  I take local potatoes knock the dirt off and steam them a bit.  Just enough to let me scoop out the insides with a spoon.  Then I mix the insides with butter, chopped leeks peppers onions garlic and mushrooms.  Throw in some fried bacon bits and grate some Colby Jack cheese in.  Then stuff it all back in, and wrap with some good old pork belly bacon.  Throw them on the charbroiler with a low heat hickory lump charcoal fire and wait.  I usually brush the bacon a couple of time with bbq sauce, let that brown. And then  and top with fresh cut chives and more bacon bits, just before I pull them off.  They are amazing. A must try in my opinion.
