I don’t know if I have mentioned this before, but I love cooking for people. Usually when I go to a cookout that is hosted I ask what I should bring. Chilli is one of the top requests, especially when it comes to fundraising events.
So I will share with you today my “recipe “. I don’t like to use the word recipe very often, because I rarely measure anything out. But I have been asked to try.
I start building my Chilli, or as some like to call it “Meat Soup” by cutting up a pound of Bacon and getting my pan hot. I add 2 new onions diced, ground garlic, and several different colors of peppers, paprika’s, and chilies. Then I add a pack of ground pork, and a pack of shredded beef steak.
Once the onions run clear… I add some cumin, chipotle pepper, smoked paprika, crushed red pepper, and black pepper. I like for the meat mixture to be spicier than the Chilli.
Then I start to add in 1 can Ro-Tel diced tomatoes with chillies per can of Bush’s Beans in Chilli sauce. Then I add a can of strained black beans and a can of strained northern white beans each with a matching can of Ro-Tel diced Tomatoes.
I really like a colorful Chilli that everyone one knows is made with love. I let this simmer, and add a can or two of tomato sauce as needed to get the consistency right.
Mmmmmm.. Delish!!
