Today we decided to create a masterpiece with ingredients we love. Bacon, boneless chicken thighs, and cheese.
We stopped by the market and got some pork belly bacon. A must with this recipe. Some boneless chicken thighs, from Kanahide close to the house, and some white sliced natural cheese. I laid open the thighs, and seasoned with garlic powder, onion powder, and Italian seasoning. Put the cheese in and folded it in half. The wrapped it in bacon.
The sides are spring onions and mushrooms, and some mixed veggies. Sautéed in butter.
After smoking them over a hickory wood fire brushed on some BBQ sauce. The girls are finishing their homework and getting ready for bed.
I love that open fire doing its thing. Put on a beef sausage on toward the end of the cooking time. I use a lid from a Weber to hold the heat in.
Pulled it off the grill ready to plate it up. The girls are excited. Hit 9:30 pm, but what you gonna do with a full time job. Good food takes time.
